Pom Pom 'Crab' Cakes
Torn, seared and flaked, pom pom blanc's fibrous texture is the closest a mushroom gets to real crab meat. Bound lightly and pan-fried, with lemon mayo the resemblance is honestly unsettling.

- 1Sear the torn mushroom chunks in butter over medium-high heat until golden and any moisture has cooked off, about 8 minutes. Let cool slightly, then flake with a fork.
- 2Mix the flaked mushroom with egg, breadcrumbs, mayonnaise, seasoning and spring onion.
- 3Shape into 8 patties and coat lightly in extra breadcrumbs.
- 4Pan-fry in butter or oil over medium heat, 3–4 minutes per side, until golden.
- 5Serve hot with lemon wedges and extra lemon mayo.
Press out excess moisture after searing — a wet mixture won't hold together as cakes.
