Pulled 'BBQ' King Oyster

- 1Preheat the oven to 220°C (fan).
- 2Using a fork, shred the king oyster stems lengthwise along the grain into rough strands.
- 3Toss with olive oil, smoked paprika, garlic powder and a pinch of salt.
- 4Spread on a baking tray in a single layer and roast for 18–20 minutes, turning once, until the edges are crisp and chewy.
- 5Toss the roasted mushroom with the BBQ sauce while still hot.
- 6Pile onto toasted brioche buns with slaw.
Don't over-crowd the tray — the strands need space to crisp rather than steam.
