King Oyster Scallops

  1. 1Score a fine crosshatch into one face of each coin — this helps the glaze cling and mimics the texture of a scallop.
  2. 2Heat oil in a pan over medium-high heat. Sear the coins scored-side down for 3–4 minutes until deeply golden.
  3. 3Flip, add butter, and cook the second side for 2–3 minutes.
  4. 4Add soy sauce, mirin and rice vinegar. Let it bubble and reduce into a glaze, spooning it over the coins for 1 minute.
  5. 5Plate with the glaze spooned over, scatter with chives.
