Beef-Wrapped Enoki
The Korean-Japanese classic that never leaves menus — small bundles of enoki wrapped in thin beef, seared and glazed with soy, mirin and sugar.

- 1Divide the enoki into small bundles, about a thumb's width each.
- 2Wrap each bundle tightly in a slice of beef, securing the seam by pressing firmly.
- 3Whisk soy sauce, mirin and sugar together for the glaze.
- 4Heat oil in a pan over medium-high heat. Sear the bundles seam-side down first, turning to brown all sides, about 5–6 minutes total.
- 5Pour in the glaze and let it reduce and coat the bundles for 1–2 minutes, turning constantly.
- 6Scatter with sesame seeds and serve hot.
Sear seam-side down first — this seals the wrap before the beef has a chance to unravel.
