Miso butterBlack garlicBeef jus
- 1Pat the slabs dry and season well with salt.
- 2Heat oil in a heavy pan until just smoking. Sear the slabs for 3–4 minutes per side until deeply browned.
- 3Reduce heat, add butter, miso, garlic and thyme. Baste continuously for 2 minutes as the butter foams.
- 4Rest for 3 minutes on a warm plate before carving into thick slices.
- 5Serve fanned out with a spoonful of jus.
Miso in the basting butter replaces the deep savor a beef fond would normally give — don't skip it.
