Akurataki Steak

Akurataki's dense, steak-thick flesh takes to the same treatment as a real steak: hard sear, basting butter, a short rest. Carved and served with jus, guests genuinely ask what animal it came from.

  1. 1Pat the slabs dry and season well with salt.
  2. 2Heat oil in a heavy pan until just smoking. Sear the slabs for 3–4 minutes per side until deeply browned.
  3. 3Reduce heat, add butter, miso, garlic and thyme. Baste continuously for 2 minutes as the butter foams.
  4. 4Rest for 3 minutes on a warm plate before carving into thick slices.
  5. 5Serve fanned out with a spoonful of jus.
