- 1Soak the dried judas ear in warm water for 20 minutes until fully rehydrated and quadrupled in size.
- 2Drain, trim any tough stem base, and slice into ribbons.
- 3Blanch in boiling water for 1 minute, then shock in ice water and drain well.
- 4Whisk together black vinegar, chili oil, garlic and sesame oil.
- 5Toss the wood ear in the dressing, scatter with coriander, chill briefly before serving.
