Made with Dried Judas Ear

  1. 1Soak the dried judas ear in warm water for 20 minutes until fully rehydrated and quadrupled in size.
  2. 2Drain, trim any tough stem base, and slice into ribbons.
  3. 3Blanch in boiling water for 1 minute, then shock in ice water and drain well.
  4. 4Whisk together black vinegar, chili oil, garlic and sesame oil.
  5. 5Toss the wood ear in the dressing, scatter with coriander, chill briefly before serving.
