Porcini Risotto From the Jar

Made with Dried Porcini

  1. 1Soak the dried porcini in the warm water for 20 minutes. Drain, reserving the soaking liquid, and chop the rehydrated porcini.
  2. 2Strain the soaking liquid through a fine sieve or muslin (it often carries grit) and add it to the hot stock.
  3. 3Soften the onion in half the butter, add the rice and stir 1 minute.
  4. 4Add the white wine, stir until absorbed, then add the chopped porcini.
  5. 5Add the porcini-enriched stock a ladle at a time, stirring, for about 18 minutes until creamy and just tender.
  6. 6Off the heat, beat in the remaining butter and parmesan.
