Porcini Risotto From the Jar

- 1Soak the dried porcini in the warm water for 20 minutes. Drain, reserving the soaking liquid, and chop the rehydrated porcini.
- 2Strain the soaking liquid through a fine sieve or muslin (it often carries grit) and add it to the hot stock.
- 3Soften the onion in half the butter, add the rice and stir 1 minute.
- 4Add the white wine, stir until absorbed, then add the chopped porcini.
- 5Add the porcini-enriched stock a ladle at a time, stirring, for about 18 minutes until creamy and just tender.
- 6Off the heat, beat in the remaining butter and parmesan.
