Forest Jar Soup
A handful of the forest mix soaked and simmered with barley and thyme — a peasant soup with an aristocrat's perfume.

- 1Soak the dried forest mix in warm water for 20 minutes, then drain, reserving the liquid, and roughly chop any large pieces.
- 2In a pot, soften the onion and carrot in a little oil for 5 minutes.
- 3Add the barley, stock, reserved soaking liquid (strained) and rehydrated mushrooms.
- 4Add thyme, bring to a simmer, and cook for 25–30 minutes until the barley is tender.
- 5Season to taste and serve hot.
